Flax Cookies

Vegan and gluten free, loaded with fiber, healthy fats and antioxidants. Sooo healthy you can even eat them for breakfast! I do!!

½ cup hot water (does NOT need to be boiling)
3 tablespoons freshly ground flax seeds (ground finely in a coffee grinder)
2 Tablespoons oil (coconut or olive oil)
2 Tablespoons maple syrup (optional)
3 Tablespoons semi-sweet chocolate chips (optional, vegan if you care)
1 cup dried organic fruit finely chopped (raisins, cherries, dates, or a combination)
1 cup organic gluten-free rolled oats
½ cup ground gluten-free rolled oat flour (I use a coffee grinder and grind it finely)
½ cup chopped pecans

Put hot water in a large bowl and grind flax seeds, add them to the water and whisk until a gel forms (3-5 minutes).

Add oil, maple syrup, and dried fruit to the flax seeds and mix well. 

Add in oats, oat flour, pecans and chocolate chips and mix until a cookie dough-like consistency forms. If too wet, add more oat flour, if dry, add water or oil.

Put a sprinkle of olive oil on a cookie sheet and drop dough with a teaspoon. They will not change in form so can be flattened out and spaced near each other.

Bake for 20 minutes at 350 degrees. Yeilds 20 cookies.
